Raspberry, Coconut & Chia Overnight Oats

Raspberry, Coconut & Chia Overnight Oats …another creation which is a real hit in our house! It’s one of my favourite breakfasts, you have to be quick in our house not to miss out!

Place in a jar or bowl in the following order.

1/3 cup Oats
2/3 cup Yoghurt
1/3 cup Milk ( maybe a little less depending on your taste)
1 tsp LSA
2 tsp Goji Berries
2 tsp Coconut flakes
1 tsp Chia Seeds
1/2 tsp Cinammon
1/3 cup Berries ( I used Raspberries in this one, frozen)

Mix gently, cover & soak overnight!

Enjoy !

My past week in pictures…& a little milestone for The K J Collective!

My week started hectic as always, it was the last week of term for my kids, which made it worse I think! It seems a bit easier when I’m organised, my overnight oats helps this cause.

This week also marked 1k followers for my blog. Happy dance-woo hoo! I am so grateful to have so many lovely people following my blog here & on IG. I love receiving such wonderful support from so many of you, some of you make me laugh too!! ….thank you! It keeps me motivated to keep doing what I love! ✖️✖️

My week of Cooking ….

After a busy weekend, I visited the green grocer early on Monday after dropping off the kids to school. I visit Toscano’s in High Street, Kew..THE BEST….when I can’t get to the market.

Fruit & vegetable shopping was done in record time and I picked up some of the most amazing blubbererries. Inspired by this, I was determined to enjoy them all week ( & try not to share any 😉).

I particularly enjoyed them in my yoghurt with home made granola….delicious!

My baking this week consisted of Molten Chocolate Chunk Brownies ( thanks Donna Hay), made from a packet mix in record time!

I also made a delicious Banana Bread, again inspired by Donna Hay, but with a little tweaking. ( recipe on my blog in an earlier post)

Inspired by a post from Yvette Wilson from The Stylist SplashI was hoping to make her Baked Chicken Dish which featured on her blog, as part of her challenge for ‘Salt & Pepper Bake Off’. But after getting prepared & chopping all my ingredients, I found one of the major ingredients missing! Bugger! So plan b came into play, a baked Portuguese Chicken Dish was made instead. It was delicious, full of colour & a little spicy! Yum!

My week of BLUEBERRIES!

After a trip to the green grocer on Monday, it was decided I was having blueberries for brekky this week! I also seem to have an excess of bananas at the moment, so this way I can get through hose too.

Here’s my recipe for a great smoothie, give it a go & let me know what you think!

Mango Banana Berry Smoothie!

300ml Coconut water Raw C
1/2 frozen banana
1/2 cup frozen mango & blueberries
1 big handful spinach
1 tsp Goji berries, LSA & chia seeds
1 scoop Isowhey vanilla protein powder
1 tsp cinnamon
1 tsp coconut oil
